If I hadn't had a fabulous chef (and relative!) to make my wedding cake, I would have been all aboard the cupcake train!
Cupcakes are a great alternative, and can be used for pre-wedding events like the shower, your actual wedding day, and post-wedding events like the gift opening. They're so easy to make, you can even do it yourself!
Here is my absolutely fabulous buttercream icing recipe, which I swear by. My husband says it tastes like edible silk...
Buttercream Icing
Ingredients:
6 tablespoons butter, softened (no substitutions, I mostly just use 1/2 cup butter)
3 tablespoons 35% cream, unwhipped (you may use 18% cream or half and half or full-fat milk, but will not be as creamy)
1 teaspoon vanilla

1. In a bowl, beat together the butter, whipping cream and vanilla until smooth (about 3 minutes).
